I AM a fan of anything that combines chocolate with butter. Anyone who knows me, knows that I LOVE peanut butter! Add chocolate and I am one happy girl! These Peanut Butter Cups are better than Reece Cups! Try and agree.

  • 1/2 cup butter, melted
  • 16 ounces confectioners sugar (1lb)
  • 1 1/2 cups Peanut Butter
  • 1 tsp vanilla extract
  • 2 cups semisweet chocolate chips
  • 1-2 TBSP shortening

In a mixing bowl, combine melted butter, confectioners sugar, peanut butter and vanilla. Mix well. Cover the dish and keep it in the fridge for an hour or until it cools down.

I use a scooper from Pampered Chef rolling my cross into a cup. You can just roll them into balls in your hands if you don’t have a scooper.

Depending on how long you take them out before you prepare them, you may want to put them in the fridge or freezer for a few minutes to set them back when you melt the chocolate.

I don’t have a dual boiler so I just put the chocolate chips in a glass plate along with Crisco. Mix every 30 seconds until melted to consistency.

Take a spoon and toss the cups in the chocolate, wipe in the chocolate to cover completely. Place a chocolate-covered cup on wax paper or cookie paper if you do not have wax paper.

I usually put it back in the fridge or freezer to dry the chocolate. You can just leave them and they will eventually dry out but if you want them to dry quickly, throw them in the fridge or freezer for a few minutes.
